The Cake Quest

One of the fun New Year’s resolutions I made was to make better cake.  (Noel is of course very supportive of this goal.)  I am a pretty good baker, but I have just never been very satisfied with my cakes. I bought some bleached flour (since it’s lighter than the unbleached we typically use) and set out looking for some recipes to try. (In case you were wondering, this is why my recipe board on Pinterest is mostly cakes.) My first try was a Lemon Cupcake with Lemon-Blueberry Buttercream recipe from My Cooking Addiction.

I halved the cupcake recipe in an attempt to prevent us from eating too much cake and divided the frosting recipe by four because oh my goodness the four sticks of butter version would have made way too much frosting in my opinion. I also skipped the lemon extract and added more blueberry puree to the frosting. The results were delicious. The cake was moist, the lemon curd filling was delectable, and the blueberry frosting really sealed the deal. I think this recipe would also be delectable in layer cake form with the lemon custard in between the layers.

I guess my next step is to work on making the cupcakes cute and then maybe learning to take better pictures.
